Vegan Curried Sausages
Serves 4
Ingredients
- 1 tbsp extra virgin oil
- 600g vegan sausages (or sausage of choice)
- 3 garlic cloves, minced
- 1 large onion, halved and sliced
- 1 cup of peas frozen
- 1 tbsp curry powder
- 3 tbsp of organic plain flour
- 2 cups (500ml) vegetable stock
- 1 tsp maple syrup
- 1/2 tsp Himalayan salt
- 1/2 tsp black pepper
Instructions
- Heat oil in a large pot on high heat.
- Cook sausages, until brown on all sides and remove from pan.
- In the same pan add the garlic and onion and cook until sauteed.
- Add curry powder and combine well.
- Add organic flour and mix in with curry mix until well combined.
- Slowly pour in vegetable stock, continually stirring to ensure the flour/curry mixture blends in well.
- Add carrots, maple syrup, Himalayan salt and pepper, stir well.
- Add sausages and peas, bring to simmer and cook for 3 minutes or until sauce thickens.
- Serve over mashed potato, cauliflower or rice.
