Make sure to try this Summer French recipe during watermelon season for something different.
This recipe is packed full of Vitamin C, A and antioxidants that will leave your skin glowing and healthy.
Grilled watermelon can be consumed savoury or sweet by the toppings and dressings you use. This recipe is for savoury watermelon, though I have had some sweet options below.
Serves 1
Ingredients:
1-2 slices Watemelon
Salt and Pepper
2 tablespoons - Cashew & Sunflower seed mix or crumbled fetta cheese.
Mint for garnishing
1 handful of Rocket
Balsamic Glaze dressing
Extra virgin olive oil
Directions:
- If making the cashew sunflower mix soak the cashews and sunflowers in hot water for 10minutes or overnight to soften. Once the nut and seed mix has soften allow to cool and chop into small pieces along with the fresh mint. Put mixture aside in the fridge to chill ready for garnishing. If you are using fetta cheese crumble it ready for garnishing later or crumble straight onto the watermelon before serving.
- Cut the watermelon to be at least 1 inch (2.5cm) thick, slicing away the rind.
- Drizzle a grill pan or BBQ with olive oil and heat. Once heated place watermelon on grill or BBQ, season with salt and black pepper, and cook until grill marks appear. Cook watermelon on both sides.
- Once watermelon is grilled place rocket on a plate, add grilled watermelon, garnish mix and balsamic glaze to finish it off.
Notes:
For sweet try adding some fresh fruit or yoghurt to the watermelon with drizzled maple syrup and lemon.
