Vegan Curried Sausages

 

Try this warm and hearty meal to warm the insides in the cooler months for some healthy comfort. The curry spices have the added health benefits of improving circulation and digestion. 

 

Serves 4

Ingredients

  • 1 tbsp extra virgin oil
  • 600g vegan sausages (or sausage of choice)
  • 3 garlic cloves, minced
  • 1 large onion, halved and sliced
  • 1 cup of peas frozen
  • 1 tbsp curry powder
  • 3 tbsp of organic plain flour
  • 2 cups (500ml) vegetable stock
  • 1 tsp maple syrup
  • 1/2 tsp Himalayan salt
  • 1/2 tsp black pepper

Instructions

  1. Heat oil in a large pot on high heat.
  2. Cook sausages, until brown on all sides and remove from pan.
  3. In the same pan add the garlic and onion and cook until sauteed.
  4. Add curry powder and combine well.
  5. Add organic flour and mix in with curry mix until well combined.
  6. Slowly pour in vegetable stock, continually stirring to ensure the flour/curry mixture blends in well.
  7. Add carrots, maple syrup, Himalayan salt and pepper, stir well.
  8. Add sausages and peas, bring to simmer and cook for 3 minutes or until sauce thickens.
  9. Serve over mashed potato, cauliflower or rice.
