AUTUMN SALAD

 

Now is the time where it is not too cold for soups yet but getting a bit too cool for nice cooling crispy salads. Which makes this tasty Autumn salad a nice and healthy immune-boosting inbetweener as we start to get the cooler days. Orange vegetables are a great choice for Autumn as they packed full of vitamin C and A which help boost our immune system as we head into winter. By cooking orange vegetables, you are allowing Vitamin A and carotene to absorb easier in the body. Cooked orange vegetables are one I would recommend including into your diet during Autumn as it helps create healthy cells in the immune system and in the digestive system. You can cook them by steaming, baking, roasting, boiling, sautéing, stir-frying, and stewing. There are so many ways to cook vegetables. Below is my tasty Autumn Salad enjoy.

Passion Fruit Smoothie

 

It is passion fruit season here in Australia so here is a slight twist to the normal tropical smoothie to include this gorgeous fruit to the mix. Passion fruit is a great source of, antioxidants, vitamin A, C, B-6, Potassium, Magnesium, calcium, iron, and fiber. Did you know in herbal medicine we use the passionflower leaf and the flowers for the medicinal properties that help assist with anxiety and sleep. I love it that much that the aerial parts of passionfruit are in my   Relax and Unwind tea. Nature has gifted us with some amazing plant medicine and nutrients to help keep our body healthy and strong.

Anti-Inflammatory Roasted Zucchini and Basil Pesto

Vegan, dairy-free, gluten-free

Basil contains essential oils of Eugenol, linalool, and citronellol that mimic over-the-counter pain medications. Basil contains enzyme-inhibiting oils, anti-inflammatory and antinociceptive actions on the body that reduce inflammation. Zucchini also contains anti-inflammatory properties, antioxidants (vitamin A, C, superoxide dismutase glutathione peroxidase). Most of these compounds can be found in the skin of zucchini in higher quantities and is best to eat the skin with the flesh for the best results.
