 valentine biscuits

¾ cup of plain flour (wholemeal, spelt or gluten free will work)

¾ cup of almond meal

1 cup of sugar (Coconut or rapidura sugar is best)

Pinch of salt (Himalayan salt or good quality sea salt)

1/3 cup of coconut oil

2 Tbsp. of fresh lemon juice

Extra flour for rolling the biscuit dough with

Preheat oven to 180degrees

Place some baking paper on your baking tray and set aside.

Mix all the ingredients together until you have a biscuit dough that sticks well together. If you find the biscuit dough is to wet add a little more flour or almond meal or if you find it to dry add a little more coconut oil.

Once all the ingredients are sticking well, roll the dough out onto a floured surface to about half a cm thick. Use a heart cookie cutter to cut your biscuits out placing them on the baking tray once cut.

Place into the oven for 15 minutes and take out of oven and allow to cool.

Enjoy and always cook with love!
